This all depends on what you mean by no longer a client. If you convert a lead to create an account/contact/opportunit y records why would you want to go back to a lead record?
The expectation with CRM is that after converting a lead you don't take the customer back to a lead record.
You could do this by deactivating the client and reactivating the lead or may be creating a new leads, but first you need to be clear on your business process and then you can set this up in CRM.
If you want to keep their data and products they bought then I strongly recommend that you keep the client record and do nothing. What business advantage do you gain by going back to a lead?
